The Sky Room has recently reopened with a refreshed experience that highlights a dynamic multi-course tasting menu, featuring the talents of Chef Luke Johnson.

The newly revived Sky Room fine dining experience features a menu revolving around the finest ingredients, both local and global. The multi-course menu, which ranges from 5 to 8 courses, celebrates the bounty of nearby grown produce, as well as specialty products from around the world. Highlights of The Sky Room’s summer tasting menu include raw scallop with watermelon, basil and manchego, and pork belly ravioli with corn and blueberry.

Andrew Mosblech, La Valencia Director of Food and Beverage, will collaborate with Chef Johnson to create a wine-pairing menu to accompany the flavorful cuisine offered in The Sky Room. Mosblech carefully pairs each menu item with the finest wines to complement Chef Johnson’s culinary creations, establishing the ultimate sensory experience.
